The relay watches the traffic passing through it and filters abuse before it can damage that reputation, so ordinary business mail is not tarred by somebody else's behaviour.
Yes, and they matter. A relay improves the reputation your mail is judged on; SPF and DKIM prove the mail is genuinely yours. We configure both when we set up your domain, and we will check them for you if you are unsure.
Inbound filtering is handled separately by SpamAssassin, which is also included. MailChannels covers what leaves your account.
